Homemade Funnel Cake

What is a summertime memory without a carnival involved? Don’t know?! Try summer 2020. COVID 19 came into our lives and has had us on lockdown since the end of March. Now that I’m a mom, I miss seeing my kids smiling faces as they go from the swings to the Mary-go-round. But if I’m honest, I miss the funnel cakes.

I have NEVER been to an amusement park, fair, or a carnival without getting a funnel cake. In fact, the first time I went to Disney, I searched high and low at the theme parks to find one. I was told that Magic Kingdom had them at a spot called Liberty Square Sleepy Hollow. I waited in their line for what seemed forever. I didn’t care because it was something about the deep fried batter that is topped with sweet confection sugar that makes funnel cakes my ultimate favorite summer treat.

Just when I thought this would be a summer without a funnel cake, I figured why not make my own? My funnel cake recipe is perfect for social distancing at home. No long lines, and you can top it it with whatever you like without paying extra. Me personally I like my funnel cake simple. Just give me my powder sugar. If I’m feeling fancy, then and only then do I add on my homemade whipped cream.

How to Make Funnel Cakes

Enough of me ramblings, let’s get the dry ingredients for this timeless recipe ready. You are going to need flour, granulated sugar, cinnamon, nutmeg, and baking powder. The exact measurements will be listed down below.

1. Start by mixing your dry ingredients. Then in a separate bowl, whisk together milk, egg, water and vanilla.

2. Combined the dry and wet until it is a smooth consistency.

3. In a pot of hot oil, drizzle batter in thin lines, swirling and overlapping using a funnel. I ordered mines from Amazon (click link).

Tip: Place funnel over the heat with one of your fingers covering the bottom as shown above. Once you pour in the batter, you can remove your finger and let the batter drip out.
Let the batter cook for 1-2 minutes on both sides and then flip with tongues or a spatula.

  • ¼ cup milk
  • 1 egg
  • 1 tablespoon water
  • ½ teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • ¾ teaspoon baking powder
  • 1 pinch salt
  • ½ cup all purpose flour
  • 4 Tablespoons powdered sugar

  1. In a large liquid measuring cup or batter bowl with a spout, whisk together milk, egg, water and vanilla.
  2. Add sugar, baking powder and salt and whisk until combined.
  3. Add the flour, and whisk until completely smooth. Set aside.
  4. In a medium, deep-sided pan or pot, heat 1″ of oil to 375°F over medium-high heat. When you put the end of a wooden spoon in the pot and bubbles form around the spoon, it’s ready. Reduce heat to medium
  5. Drizzle batter from cup in a thin line, swirling around the pan and overlapping as desired. Cook for 2 minutes or until light golden brown, then flip and cook another 2 minutes or until golden brown.
  6. Dust with 2 tablespoons powdered sugar and serve. Repeat one more time with the remaining batter.
